Steamed orange pudding
250 g unsalted butter 5 eggs 1 orange 250 g caster sugar 250 g self-raising flour marmalade cream 1. Heat the oven to 180C 2. Beat 250 g unsalted butter with 250 caster sugar until pale and fluffy 3. Add 5 eggs, one at a time, beating well after each 4. Mix in 250 g self-raising flour and the juice and zest of an orange 5. Grease eight 200 ml moulds and put a good tablespoon of marmalade in the bottom of each. Fill the moulds to about two-thirds, then cover each with foil. Place in a baking tray, and pour boiling water into the tray. Cover the whole tray with foil. Steam for about one hour. 6. Turn the puddings out by running a knife around the sides, putting a plate on top and then inverting pudding and plate. The pudding will come out perfectly, with the hot marmalade running down its sides. Serve with cream.
